I have not been a fan of the summer season ever. The food that people generally like to eat during this season is something that is very light on the palette, like a salad. But the salad options get too boring at times. The classics like Greek and Caesar salads don’t always work right? After-all, variety is the spice of life. And as I am a foodie myself, I really like variety on my dinner table. Cooking for my family is my another passion. And playing with different ingredients and their flavorful textures, soothes my gastronomic intentions. Salads with loaded dressings just doesn’t work for me. I like to eat a plate full of green goodness that is as tasty as it is rich in nutrients. And fitting the bill, this POMEGRANATE SPINACH SALAD is an ideal summer meal. In addition to it’s great taste, the recipe gets ready in just a few minutes. It’s perfect for a starter at lunch or even as a light dinner if you’re on a weight loss program.

Now that the weekend is over, we all need to get back on track with healthier eating. Although I did fairly well by avoiding most of the bad food, I just ate more than I should have.
Like most people, I want to improve my health this year and for this I have chosen the KETO DIET. Improving health also means eating better, reducing stress, and becoming more active. Another thing I want to work on is spending less time in the kitchen, you know how it gets so tiring to cook every day of the week. I also have a habit of snacking more than I should. I’m one of those people who has a hard time refraining when I see anything to nibble on. So, I just need to clear the food out of my sight and getting out of the kitchen will surely help with that.

Eating healthy is awesome but at times the food in particular gets a little too boring. With not much choices you tend to repeat your recipes. This can sometimes take you on the verge of a breakdown (and ruining your diet) because deep inside, you crave to eat food that comes in those takeout boxes and is amazingly delicious, loaded off course but yes unavoidably tasty. Whenever I am in such kind of a dilemma, I always make myself something that is loaded with herbs and flavors, it really satiates me to the next level. Chicken being my favorite dinner, this chicken breast seasoned with garlic, basil, and red pepper flakes really peps and lifts my mood. The best part of this recipe is that its loaded with proteins and very less on the calories, It’s just perfect for a hearty meal. Make a side of grilled veggies along this and you will be sorted. Knowing the benefits of QUINOA, I have fallen in love with it and have been looking for various ways to incorporate this SUPERFOOD into my daily diet. But prior to my various recipes of quinoa, I’ve only known it in savory dishes. So last night I experimented. I wanted to treat myself with a delicious dessert, but with very few ingredients available, I tried whipping up the best I could. And the result was this amazing looking, health-loaded parfait that has all the goodness of quinoa, yogurt, some yum jam, crunchy chia, fruits of my choice- pomegranate, blackberries and raspberries. Heaven in a cup, layered to perfection. What else do you need to comfort you in the night right? You can always make this according to your taste. Throw in nuts of your choice, any kind of fresh fruit, It will always turn out great. This could be an ideal breakfast option too, just make it a night before and it’s ready to eat in the morning.

Today it’s all about the mains. Let us discuss one of my favorite main course dishes – THE ZUCCHINI RISOTTO. With very few ingredients to make with, this one is a sure shot winner for that easy and laid back dinner preparations. It’s so filling that all you would need along is something to gulp down with. This creamy yet not that heavy dish gets it’s color from the addition of crunchy zucchini and sun dried tomatoes. Off-course the basil does what it does best- lends a beautiful aroma to this dish. Unlike any other usually butter loaded risottos, this one is very light on the palette. This can be one of your GO-TO weekend meals which will enhance that quality time you will spend around the dinner table with the most special people.
